    I make a big batch of soup weekly during the cooler months. I freeze the majority so there is some on hand for a quick lunch or dinner. I’m always looking for new ones to try, and these all look yummy. A favorite of ours is a Vegetable and Bean soup that is easy and delicious – Rachael Ray’s ‘My Moms Tomato and Bean 15 minutes Stoup’. Honestly, it takes a bit more than 15 minutes, but worth it. I don’t add the green beans, but I use a ton of zucchini and I use low or no sodium chicken stock. Got this recipe from my friend Laura, and now my kids make “Miss Laura’s soup” all the time too. Thanks for sharing all yours!

    Hi Cindy,
    Soup is the best easy meal with a salad, or even just with a piece of baguette, it’s my go to when it’s rainy and cold. I will definitely try some of those recipes you’ve shared. We’re getting a large rainstorm today. Much needed so I’m a happy camper.

    You are the hostess with the mostest! Here’s how I cheat to make one kind of soup. I love lentils, any kind, and will buy the steamed lentils, ready to eat, from, where else? Trader Joe’s! They are a fast way to get started without soaking and cooking. From there, I crumble them into the pot, add herbs, spices or whatever I’m in the mood for and broth of some kind. I don’t even need a recipe since it’s so forgiving. If you like, you can add spinach or some kind of sausage. Top with chives, cheese, sour cream, etc. or just leave as is.

      Those lentils from TJ’s are great. You’re right Wren. You can do anything with them. For soup I just cook some chopped carrots and onion in some olive oil, add 4 cups of vegetable broth, some spinach or chopped kale and about 2-3 tablespoons of balsamic vinaigrette and a half package of the lentils. I freeze the rest of the lentils. The broth has a beefy flavor. Makes about 4 servings.
      Thanks Cindy for all these great soup recipes. It’s been cold and rainy (yay!) here in Northern California. Perfect soup weather. I really enjoy your newsletter.

    I love soup! We make soup on Sundays often in the winter, it is comforting and the scent wafting in the house all day makes the house seem warm and cosy. Thank you for sharing your favorites, I cannot wait to add a few of these to my list.

      Once Steve retires and will be here full-time (very soon) I will get back to my Sunday routine of making soup as well.
