We don’t get a lot of rain here on the Central Coast most years. Thankfully, this year we have. We rarely need a raincoat or hat but this year is a different story. Rainy days mean no grilling (I know we are spoiled). I am a huge soup lover so I have been in soup making overdrive. I thought today I would share with you A Heartwarming Soup and some sassy rain gear.
This soup has been a family favorite for years. Our local bagel bakery makes a version of this that my kids loved when they were little. I zhushed it up a bit to make it a little more healthy by adding roasted red peppers and tomatoes. I made this for our friends at the lake last weekend. Enjoy!
Artichoke Bisque with Roasted Tomatoes and Peppers
- 3 lbs cherry tomatoes
- 1/4 c plus 2 T (divided) olive oil extra virgin
- 2 T butter
- 2 red peppers
- 1 1/2 yellow onion
- 5 cloves garlic
- 2 14 oz cans artichoke hearts chopped
- 4 c chicken stock
- 3/4 c freshly grated parm
- 1/2 pt 1/2 and 1/2
Preheat oven to 400 degrees. Spread tomatoes, onions, and peppers on 2 large baking sheets in a single layer and toss with ¼ cup olive oil, salt, and pepper and 2 T chopped basil. Roast for 20 minutes. Remove from oven and set baking she,et aside.
In a large Dutch oven over medium heat, 2 T olive oil and 2 T butter. Add garlic saute until just soft and add artichoke hearts and saute for 5 minutes. Sprinkle in ½ T salt and some pepper. Add chicken stock, and roasted vegetables (including their juices. Raise heat to high and bring to a boil. Reduce and simmer for 30 minutes (uncovered). Use an immersion blender or Cuisinart to blend mixture until mostly smooth. Add 1/2 and 1/2 to finish. Serve with a sprinkling of fresh basil and parm.
I like to keep entertaining at the lake simple so I served it with this simple caesar wedge salad from simple bites. I made the mistake of making my own caesar dressing because I am not much of a bottled dressing fan (fyi don’t). I would pick up Maries Caesar dressing in your refrigerator case. This salad is better and simpler as stated in the recipe.
There you have a nice heartwarming soup for a rainy day. Since we have been having so much rain I have been on the lookout for a pretty new raincoat. Do you ever shop at Athleta? I find their clothes to be really well made for the price point.
I love this rain jacket. It isn’t on sale (they don’t have too many sales) but it is priced fairly. Who doesn’t need another leopard scarf, right?
