Scouty is Getting Huge

Scout must weigh 80 pounds now. He is great traveling on small outings. He still gets a little excited upon meeting folks, and likes to eat anything in sight, but he is getting to be a great dog. He will be a year old next month.

I know you will ask…I am wearing madewell jeans, suede Gentle Souls booties that I have featured many times before, a favorite bag from FEED (a great company you will want to get to know if you don’t already. (sadly no longer available), a gifted sweater from Quinn, and a vintage etro scarf (you can find similar on eBay here)

Blog Happenings

We are in the process of switching our email provider to Flodesk. I know many of you have had problems with Mailchimp. I have avoided switching for a long time because I have an RSS feed with Mailchimp which meant I produced the post and it was sent to all of you. Flodesk is more engaging, so I hope you will enjoy it! This is the last week to fill out the blog survey. I will post results next Sunday. A big thank you to all that filled it out. Healthy Tomato Pepper Soup

I do several of these kinds of soups where I just roast a combination of vegetables, onions, garlic and herbs in the oven, puree them and add chicken stock, and or a mixture of dairy. They are so healthy and delicious. You can vary the amount you add to your personal taste.

Roasted Tomato and Pepper Soup

Servings 4 six if you thin the soup with chix broth

Ingredients

  • 6 to 7 cups tomatoes 3 to 4 pounds – (any kind)
  • 1 medium white or yellow onion, cut into wedges
  • 5 cloves garlic peeled, left whole
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 2 large red bell peppers
  • 1/2 teaspoon black pepper
  • 1/4 tsp dried thyme
  • 1/4 to 1/2 teaspoon red pepper flakes
  • 1/2 c 2% milk whole milk, or 1/2 and 1/2
  • chix broth to taste
  • 2 T fresh snipped basil

Instructions

  • Preheat your oven to 400 degrees Fahrenheit. Line an extra large rimmed baking sheet (or, two large baking sheets) with foil Remove any stems from larger tomatoes, and cut the larger tomatoes into wedges. Leave any small grape or cherry tomatoes whole. You can use all of the same tomatoes, if you prefer. Add the tomatoes to the baking sheet. Along with the cut up onion, and peppers. Toss with 2 tablespoons of olive oil, 1/2 teaspoon salt, thyme, and garlic cloves until they’re well coated in the oil and salt. Spread them out in an even layer.
    Roast the tomatoes, peppers, garlic, and onion for 20 to 25 minutes, or until the tomatoes, have shriveled up a little, released their juices, and the onion and peppers are tender. The garlic cloves should be slightly browned, and fork tender.
    Cool slightly. Pour entire mixture into Cuisinart and blend until smooth.
    Transfer the soup to a medium pot and slowly heat the soup through. At this time add chicken broth and desired milk product to taste. Serve warm and top with fresh basil.

  5. I also tried to do the questionnaire a couple of weeks ago but couldn’t get it to send back and gave up. You know I love it all!
    For people too lazy to go to the work that you do of roasting the vegetables and then making the soup from scratch, TJs has a very good organic tomato and roasted red pepper soup that I always keep on hand during colder months. I find it to be delicious.
    The white blouse (Exquise) you show reminds me of one that you featured some time ago that I think was from Athleta and I wanted so badly but it was sold out. This one may be more pleated but is a good look on the right body. Love the pops of red you show; I need more red in my clothing. I have quite a bit in my home but can’t seem to find what I like to wear.

      Yes I love that soup from TJ’s! I usually keep it on hand as well. It is great with a grilled cheese! It reminds me of growing up in Indiana. My mom wasn’t much of a cook, so Campbells tomato soup (not nearly as tasty as TJ’s) and a grilled cheese was a favorite of mine! I always add fresh basil to the TJ’s soup and it is yummy!

    Hi Cindy, I love your posts and follow you faithfully. I could not complete your survey either. My only suggestion I would make, and remember I love your post!!, is to post less often. My favorite is Sunday. With all that’s going on in the world, you are a breath of fresh air but information is overloading me. Keep up the good work and don’t stop posting (just less).

        Thank you so much! As I told Pam, it is my passion and my job. Until I decide to retire, or semi-retire, I will continue to post 3 times a week. Many bloggers post five times a week. I don’t plan to do that.

      Thank you so much for your thoughts and support. Helping and inspiring women over 50 is my passion, and I am lucky to call it my job as well. We would not be able to do some of the things we are doing if I didn’t work. I have an assistant who is a vital part of this blog as well. It is a full time job for me, and until I decide otherwise, I will continue to post three times a week. I understand some do not want so much mail. Soon we will be offering the option of only receiving a weekly email that links to all the weekly post on Sundays as soon as we figure out how to do it!!

    Scout has my heart!! I had a white lab called Buckwheat and he was always in the same room with me and immediately followed me whenever l went. Labradors are amazing dogs. I would drive my kids to school and Buckwheat would be overjoyed if he came too, l would get my workout in early lifting him into the back. Dogs and kids what a pairing!
