SUMMER CORN TOMATO AND SALMON SALAD

We are fortunate to have a great seafood market Pier 46 in Templeton When I spotted this summer corn, tomato and salmon salad in Epicurious, I knew I had to make it. By the way if you are in the area, they have the best Ahi Tacos in the world in my humble opinion.

SIX WAYS TO MAKE COOKING FOR ONE EASIER

Steve is commuting back and forth to Salinas three days a week.  Those three days I eat well just “stuff”.  I spotted this article in Cooking Light and thought it could easily be applied to cooking for two .  I thought you all might find it helpful as well.

OUTFIT OF THE WEEK

I spotted this reversible (yes you heard me) quilted jacket at J Crew and thought you ladies would love it.  I have a jacket that is similar to this that many of you wanted last season but it sold out quickly.  This one is even better.  I would probably not wear it belted.  I think it might look too much like a robe. The black side would be great with the Ganni leopard turtleneck I have featured here many times.  Mary Ann has the cute birdies (I need to try them to see if they will work for me) and I always love them on her.  The pants are from Lyssee (more coming from them next week).  The crossbody is also on sale.

BRENDA’S TUSCAN TRIP

In April, Brenda Coffee from 1010ParkPlace (she recently became my Ageless Style partner) is taking a group of eight women to Tuscany! In case you haven’t read her blog, this fabulous trip starts with two days in Florence, the birthplace of the Renaissance.       My son used to say he wouldn’t eat anything that swims but he has gotten better with age! I understand. We had a great time with Mary Ann and Howard but didn’t take any pictures! Bad bloggers!

    Just purchased cp shades lily skirt on poshmark – should have been more careful in reading fabric content as 100% linen is not lined – but I got the black so not totally see through – ugh! Next time, will look at silk cotton blend. Thanks for the fashion inspiration.

    The salad looks delicious and with the heat and humidity we’ve been experiencing, it would taste refreshing.

    Cindy … that salad! Anything with corn is a YES for me. My family rolls their eyes and accuse me of putting corn in everything. How can you not love corn?! Atlanta Homes is something I drool over regularly … sigh. I love the J.Crew quilted jacket. It reminds me of the classic Burberry. With a friendlier price tag. Brenda’s trip sounds amazing … I’d better check my calendar! xo

    Thanks so much for including the blurb about our Tuscany trip in April. Spending time with other women in such an incredible place is going to be a special experience.

    Eating “stuff” and cooking for one sounds familiar. Every week I look for ways to eat better and prepare things that aren’t time-consuming because my heart isn’t in a long complicated recipe anymore.

    Look into a Tovala oven and their meal plan. Delicious healthy meals ready in 20 minutes or less. About $11-15 per meal. 2 minutes prep tops. I also bought my daughter one last Christmas. She loves it as much as me and says it’s the best gift ever. Last night I had FILET MIGNON WITH BALSAMIC CARAMELIZED ONIONS AND ROSEMARY PARMESAN POTATO WEDGES. 450 calories, 16 min cook time, < 5 min prep.
