Outfits of the Week-Still Loving Denim

I always get inspired when I am working on a post. Last week we talked about Denim Trends that Women Over 60 can Actually Pull Off. There are so many great denim options out there in every price range. I have loved this pair of Spartina 444 Maren Kick Flare pants so much that I want the same style in the fringe hem version. The outfits have a mix of the high and low.

I am coveting this bag for Spring, these pants are on my list, and this price-friendly shacket. These Cole Hann driving mocs are a great price. This tortoise necklace, earrings and sunnies never disappoint.

It won’t be long (this weekend for us) and we will never leave home without a hat. This great shirt from Sezane (love this version in Summer’s size) looks great with these jeans from Frank and Eileen are my favorite and most comfortable summer jeans (pricey but worth it) (similar here at Gap), these great Etsy mules (love the leather trim), this reasonable tote from Quince, and the same earrings and sunnies.

Love this light chambray chore coat from Gap, and these Olukai flip flops are a perennial fave. Jeans, tote, earrings, hat.

Simple Healthy Chinese Chicken Salad

I’ve never met a Chinese chicken salad I didn’t love. It’s so incredibly versatile. While many people enjoy adding mandarin oranges. I usually skip them myself. One of the best things about this recipe is it’s one of the few salads that actually stays delicious as leftovers the next day. For a bit of crunch, I’ll toss in some wonton strips if I have them.

Cindy’s Chinese Chicken Salad

Ingredients

Scale
  • 3 cups thinly sliced Napa or green cabbage*
  • 1 cup thinly sliced red cabbage*
  • 1 cup shredded carrots
  • 1 cup sugar snap peas (thinly sliced (can substitute snow peas))
  • 3 green onions (white and green parts, thinly sliced)
  • 2 ½ cups cooked (shredded chicken (12 ounces cooked))
  • 1/2 c sliced water chestnuts
  • 1/2 cup fresh cilantro leaves (stems removed, leaves roughly chopped)
  • ⅓ cup slivered or sliced almonds (toasted)
  • 1/2 c chopped or thinly sliced celery
  • 1/2 c red pepper
  • ¼ cup unseasoned rice vinegar
  • 3 tablespoons toasted sesame oil
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons avocado oil or extra-virgin olive oil
  • ½ teaspoon freshly grated ginger (or powdered if you can’t find)
  • 1 clove garlic

Instructions

  1. In a large bowl, combine cabbage, carrots, sugar snap peas, celery, peppers, water chestnuts, green onions, and cooked chicken. Toss well to combine.
  2. In a small bowl or jar combine all of the dressing ingredients. Whisk or shake well to combine. Pour over salad just before serving.
  3. Gently stir, cilantro, and toasted almonds. Sprinkle with sesame seeds, if desired.

    Your Chinese Chicken Salad looks good. I’m going to try your recipe. A question for you. Serving four ladies for a light lunch do you think this would serve four okay? I have heard of won ton strips but never have purchased them before, what department of the grocery store do you usually fine them? I’m headed to Trader Joe’s soon. They are far away from where we live.

I had off for Australia and New Zealand in two weeks-I think it will be the perfect layering jacket, especially for the cooler New Zealand evenings!! Since I have an issue with bunions (and I know you do too), I wonder about the fit with those shoes – do they run wide and do you need to size up? Also, I have that Quince chore jacket and it never dawned on me to wear it like a top! Thanks for all your great suggestions this time around!

  9. Ohhh, that salad sounds yummy and healthy at the same time. I’m always on hunt for new recipes. Now, I don’t like cilantro. What would you substitute or just leave out?
    Those jeans are fun! I like to branch out in the warmer months when I buy more colourful pieces.
