Grill Recipes When it’s too Hot to Cook

Happy Tuesday everyone. I know many parts of the country are experiencing extreme heat.  It is that time of year when heating up the house with the stove or oven is not very appealing.  I have had a lot of specific recipe requests lately which prompted me to gather some of my favorite grilling recipes together in a post. Here are my favorite grill recipes when it’s too hot to cook.

GRILLED BRUSSEL SPROUTS WITH CHIPOTLE AIOLI

THIS GRILLED BRUSSEL SPROUTS WITH CHIPOTLE AIOLI  is a summer staple at our house.  This can be served as a side or an appetizer.

Our family loves grilled romaine.  It is simple and takes minutes to prepare and grill This version GRILLED ROMAINE WITH CORN AND AVOCADO is a much-loved version!

I Haven’t made this GRILLED FLANK STEAK SALAD yet this season.  I think I will make it tomorrow night.

I keep a bag of TJ’s frozen scallops and shrimp on hand for this Simple Grilled Shrimp and Scallop Kebabs.

GRILLED ARTICHOKES WITH LEMON AIOLI

This grilled artichoke with lemon-mint aioli recipe is a simple summer favorite at our house.  I sometimes serve it as an appetizer or as an accompaniment to grilled meat.  Either way, it is delicious and fresh.

GRILLED VEGETABLES WITH ROMESCO SAUCE

The romesco sauce for this GRILLED VEGETABLES WITH ROMESCO SAUCE recipe can be made ahead.  It keeps in the fridge for a few days.  It is also good on fish and you can use the leftovers on crostini!

THREE SIMPLE PIZZAS YOU CAN MAKE TONIGHT

Before Steve got his pizza oven we used to make these simple pizzas with Naan bread.  THESE THREE PIZZAS can be whipped up in an instant without heating up the kitchen, or working too hard.

    Thankfully it’s been a lot cooler in the Bay Area and I feel for those who are enduring extended and extreme heat. Heat or no we’re always up for grilling at Snowberry! I’m pinning and printing all these recipes to take us through the rest of summer. I’m not sure why I read blogs when I’m hungry … it’s complete torture 😉 xo

    PS. Coastal San Diego is enjoying a lovely summer; we badly need rain but did have a thunder storm the other day which was highly unusual.

    Our temps haven’t been high but the humidity is dreadful. These are all delicious-looking recipes and I’ll have fun delving into each over the next few weeks.
