FRESH SUMMER PASTA WITH SUMMER’S TOMATOES

On Wednesday while babysitting Summer she picked a large ziplock bag of cherry tomatoes for “grandpa”, and Uncle Colin and Auntie Lauren.

I could eat pasta every meal if I could, but unfortunately, I need to watch my carbs.  This simple “kitchen sink” pasta is one of our late Summer favorites.

Penne with Sausage, Corn, Tomatoes and Basil

Ingredients

  • 12 oz. penne or any pasta you have on hand
  • Kosher salt
  • ¼ cup extra-virgin olive oil
  • 1 lb. aidells italian sauasage or similar
  • 3 garlic cloves grated
  • 4 sprigs basil plus 1 cup leaves for serving
  • ½ tsp. red pepper flakes
  • 2 cups fresh cooked corn kernels from about 2 ears
  • 4 oz. Parmesan coarsely grated,
  • Freshly ground black pepper
  • 1/4 c sliced green onions

Instructions

  1. Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente; drain, reserving 2 cups pasta cooking liquid.Meanwhile, heat oil in a large pot over medium-high. Add sausage, pepper flakes ,and corn, cook,  just until warmed. Add tomatoes,green onions, basil, and l c pasta cooking liquid just until heated through. Serve with freshly grated parmesan and a little chopped fresh basil.

    Hi Cindy,
    I agree with one of your readers, have your talented add beams to your bedroom. I like your quilt and window coverings even better than Carter’s designed bedroom. I noticed Mary Ann had a pair of the Birdies loafers on her post as well. I have a pair and they are wonderful. I like the summer feel of the style you showed us.

    The article about going gray is fascinating to me. I have never known whether I am warm or cool and have always bought what I liked. I have a feeling, now that my hair is platinum blonde/white, I have a feeling I have a warmer face and cooler hair. so now I have no idea what to do with that. I would love to have all this done professionally but it’s hard to do online.

    I loved your outfit of the day. I would enjoy this, but I have spent my monthly budget with new trainers, and 2 50 spf Ibkul tops for fall and some lovely bone jewelry. So I will shop my closet–I loved it that you profiled my Lexington neighbor, Matthew Carter. His vision has given me the inspiration to try new ideas. He understand paint texture and fabrication. Several years ago I attended a Holiday home tour, where I toured his wonderful home. He has the most exceptional garden and I remember sitting in 5 degree weather in my car, trying to make copious notes before I moved on to the other homes. It really was a lesson in interior design.

    Hi Cindy- I see why you are a fan of Matthew Carter’s designs… did you notice his frequent use of acid green accents in his home? One of our favorite colors, isn’t it! Thank you for sharing his talent.

    Hi Cindy,
    I always look forward to your posts and find something that is relatable. However, the link to the article about going gray was disappointing. A “Don’t” for gray=don’t wear hot pants?! Ok, I pretty much had figured that out long before I went gray! The rest of the tips are very standard and uninspired, IMO.
    Otherwise, enjoyed the other stories. Your Summer is a cutie. I only have boys (4 and 6) so am living vicariously.

    Cindy, I love the outfit~and have an interest in trying Birdies. Did try and order the chocolate color but there are only 2 sizes left and both are not mine. Still absorbing all the details of Matthew Carter~amazing how all those elements actually work together. What a gift to be able to do that! I, too, love Sundance and just purchased a pretty Johnny Was top on sale. Thanks for reminding me to check out their website more.
    Spending the weekend making homemade sauce. We are substituting spiralized zucchini instead of pasta….though there is no real substitute for pasta, it’s a healthy option. Happy Sunday.

    OMG…that pasta recipe looks divine. I have corn on the cob that needs cooking. Perhaps I could have it all without the pasta? Funny that we both have those Birdies on our posts. Howard gave me the yellow ones for Mother’s Day (a surprise)…I love the brown ones too.
