CREAMY ROASTED ASPARAGUS SOUP
This Creamy Roasted Asparagus Soup recipe is delicious! Enjoy the health benefits of one of your favorite flavorful green veggies – roasted in a soup!
INGREDIENTS:
- 2 lbs asparagus
- 1 large yellow onion, peeled and halved
- 4 cloves garlic, not peeled and left whole
- 2 Tbsp. olive oil
- 5 cups chicken broth
- 1 tsp fresh or 1/2 tsp. dried thyme
- 1 tsp fresh or 1/2 tsp dried sage
- 1/2 cup half and half
- pinch red pepper flakes
- zest and juice of one lemon
- salt and freshly ground black pepper
- pine nuts and goat cheese for garnish
DIRECTIONS:
Preheat the oven to 375 F degrees. Line a baking sheet with parchment paper or aluminum foil.
Arrange the asparagus, onion halves and garlic cloves on the baking sheet, and toss with olive oil. Sprinkle with some salt and pepper, and then bake for about 45 minutes.
Puree vegetables in Cuisinart/food processor. Add red pepper, sage and thyme.
Once the soup is pureed, return the saucepan to the stove and bring soup to a boil over medium-high heat. Then lower heat to medium, and stir in half and half. Season with additional salt and pepper, and a dash of lemon juice if you’d like. Optional garnish with pine nuts and goat cheese.
Before I let my hair go grey this shade of green was one of my favs. Initially I felt it caused my hair to take on that dreaded green tinge but now that I have my products down I am starting to wear it again.
