PREVENTION-THE BEST VITAMINS AND NUTRIENTS FOR BRAIN HEALTH

We try to eat healthy most of the time. Steve loves sweets, but rarely indulges except for a chunk of dark chocolate daily. Sweets are not my downfall, but carbs. I try not to keep crackers etc in the house, I will eat the whole box. FYI did you know you can freeze crackers? I try to pop them in the freezer if we have any left overs to avoid them. Roasted Baby Carrot and Green Bean Salad

I made this baby carrot and green bean salad to take to friends for dinner on Thursday night. It is simple to make, tastes delicious, and makes a nice presentation. Most of my salads are concoctions of what i have on hand or what is fresh. I made a citrus vinaigrette (very similar to this one from Bon Appetit,. I used two packages of Trader Joes baby carrots and one package of their haricots verts. I tossed the green beans in a little bit of the vinaigrette with salt and pepper and roasted them in a foil lined sheet pan in the oven for eight minutes at 425. You want them to be crisp tender. I halved the larger carrots tossed them in a little bit of vinaigrette and roasted them for roughly 20 minutes. Keep your eye on the oven you want them to be crisp tender not mushy. I served them on a bed of arugula with crumbled feta and thinly sliced red onion, and drizzled the vegetables with the citrus vinaigrette. You could add beets or numerous other garden vegetables to the mix. I like this vinaigrette

These are the simple ingredients I used from Trader Joe’s to create this healthy salad.

    Hi cindy, wanted to ask you about the fit of the BR pants. They’re so attractive.
    I have a small waist but fuller in the bum and thighs…sometimes a six, sometimes an eight, do they run true to size? Always love your posts. Mary

      It sounds like you have my body!! I ordered a 6 petite and they fit perfect. I ordered a petite for the length. I am guessing I would need the 4 in a regular.

    I am constantly on the lookout for great salads. This week I am making a very simple salad of diced apple, diced butternut squash, dried cherries, candied pecans, copped artichoke hearts, blackberries, crumbled goat cheese, arugula dressed with a simple vinaigrette made with EVOO, champagne vinegar, Dijon mustard, salt, pepper, herbs de Provence, the juice of an orange, zest over the top of the salad. It sounds great.
    I am going out tomorrow night and my try my version of your outfit if the week. I am excited to put this look together.

    How did I spend my Sunday? Cindy, you and Steve would have loved to be with me when I visited a vigneron in Carcassonne. We had so much fun tasting wine, then creating our own blend. However, I’m sorry to be missing out on the BR sale. I knew it was coming but can’t be bothered during my travels. Your salad looks just fantastic! You are so creative when you put together ingredients you have on hand.

    When we went to England, the Cotswolds was our favorite place. Do people really live like that? The salad looks delicious and healthy. The outfit is really pretty. I want a few animal print things to supplement my wardrobe.

      I think people do…certainly not me however! You can’t go wrong with animal print. It is a neutral in my book!

    I spent my career in women’s high end clothing. One thing I drilled into women was to wear your pretty clothes all the time. Don’t save anything for “good”. When we wear our pretty, well fitting clothes it makes us feel like a Million dollars. Who doesn’t want to feel great. Inside and out. Perhaps it is a generational thing. Who knows. But I’m the lady at the gas station who looks pulled together!

    Great salad idea! I am working on getting more vegetables into my diet (Blue Zones inspired) and this ticks that box.
    Thanks for the link to the AARP piece. Who knew that we have been Quiet Luxury all these years? I thought we were just being practical!

    I found a black wool blend zip jacket with slightly puffed shoulders at a thrift store, here in
    California . It was my “go to” garment along with a “ boppers” style hat, while traveling in Ireland and England this past month. The weather was unpredictable and some days warmer, however on the cooler days even with a backpack the jacket looked stylish. I found hats can change a complete look!

      Oops! I forgot to note carbs are a problem here too. Are a box of triscuits healthier than other crackers?
      Back to clothing ; one of the most attractive outfits I saw in Ireland was the “ sandwich” of black and ochre. Used from a hat down to her shoes.

    I’m with Steve. I love sweets too but FREQUENTLY indulge. My downfall.
    Since I am trying to be gluten and dairy free, I don’t have lots of cheese, crackers/chips and ice cream in the house unless we have company. But freezing them????? Now THERE’S an idea!
    Great post as usual – call me when you’re done packing and we’re heading for that house in the Cotswalds…..
