Simple Fresh from the Garden Lunch Your Guests will Love
Happy Labor Day Weekend. Since most of us are still enjoying summer’s garden bounty, I thought I would share a simple fresh from the garden lunch your guests will love. As usual I am joining Mary Ann and Annie for our Sunday faves.
Set a Pretty Table
We love serving lunch, brunch or dinner in our courtyard when the weather cooperates! We can seat six comfortably at our courtyard table. My husband prefers intimate gatherings like this.


I set the table with my favorite chargers, plates and napkins from Fete home. I will link everything at the bottom of the post.

Crustless Garden Quiche
Ingredients
- 12 ounces prosciutto chopped
- 1/2 cup chopped onion
- 2 Tablespoon olive oil
- 10 eggs
- 1 C 1/2 and 1/2
- 1 1/2 shreeded Gruyere cheese or trader joes shredded gruyere swiss mix
- Fresh Ground Pepper to taste
- 1/2 t salt
- 1/2 c chopped zuchinni
- 1/2 c chopped cherry tomatoes
- 2 T minched fresh chives
Instructions
- Add 1/2 T olive oil and the chopped prosciutto and add it to a large skillet. Cook for 5 minutes over medium heat and remove. Add the chopped onion, zuchinni, and 1T olive oil to the pan and sauté for an additional 5 minutes, add the tomatoes for the last 2 minutes. Remove skillet from heat.
- In a large bowl, combine the eggs, 1/2 and 1/2 . Mix well. Stir in the salt, pepper, and cheese. Add vegetables and prosciutto to egg mixture.
- Grease jelly roll pan with remaining olive oil and add mixture.
- Bake at 350 degrees for 45-55 minutes, until golden brown and puffed up. Remove from oven.
- Garnish with fresh minced chives and cut into slices. Quiche can be eaten warm, cold, or at room temperature.

Ina Garten’s Tomato Feta Salad
We have been eating a lot of tomatoes. We had a bumper crop this year. I like to serve variations of the traditional caprese. This Tomato Feta Salad from Ina Garten is simple and tasty this time of year. I used heirloom tomatoes in place of grape tomatoes because they are so good right now.

Love and Lemons Watermelon Salad
I have to be honest, most of the time I don’t use recipes. This Love and Lemons Watermelon Salad is very similar to what I prepared above. I used both yellow flesh and red watermelon for color. I omitted the avocado, and feta cheese and substituted Trader Joe’s Grilled Olives for the kalamata olives (for a little variety). Interestingly my husband doesn’t care for olives but loves these.

What to Wear
I have had my eye on this V-neck dress from Madewell. It also comes in extended sizing and also comes in black .You could wear it now with sandals, or these cute ballet flats, and wear it later with boots and a leather jacket or sweater. I accessorized it with a bag and sunglasses from Madewell.
