SIMPLE HEALTHY SUNDAY NIGHT DINNER

Many of you requested healthy recipes in my survey which kind of surprised me. I rarely ever feature anything but healthy food, which I will continue to do. Have you tried the spatchcock Chicken from Trader Joe’s? I have been making Ina Gartens Tuscan Chicken for years, and this is almost as good and much easier. Our local market had some really good beets so I made a beet salad (no recipe) but very similar to this beet orange salad from feel good foodie. I served sauteed yellow squash and zucchini on the side. A simple, healthy, and delicious dinner.

I wish I had more time to read (2024 goals) work smarter, not harder. Katie is an avid reader and when I am looking for a good book to read I consult Katie. PINE CONES AND ACORNS 11 WAYS TO BEAT THE WINTER BLUES

We have nothing to complain about here in California but we have had what seems like weeks of dreary weather. We love the rain, but I am talking dreary with not all that much rain. My friend Elizabeth has some great ideas in her post 11 Ways to Beat the Winter Blues here. As you may know we are heading to the beautiful Wilamette Valley on Monday and more rain is in the forecast. We are looking forward to experiencing some great pinots, wonderful food and the beautiful Atticus Hotel.

    I love your advice and recommendations….but it is getting too hard to tell your recommendations from the ads. Frustrating. I know that is the way of the world now, but I would rather pay for content than trying to discover it with all the flashing photos. Ads or recommendations? Who can tell?

    Lovely black and white jacket!!!!
    And particularly enjoyed the link to how to deal with winter. I love winter here in Southern Australia – 9-10 Celsius is about as low as it gets during the day and life is for the taking, I think. There’s always empty beaches to walk, trails to hike, gardens to care for and then classes to attend.
    But some of the tips in that link were perfect.

    Thanks for the reading lists. Always welcome. We don’t have a TJ in our town so I spatchcock my own chickens. My husband of almost 49 years is always impressed! Have a terrific road trip. The weather may be rainy but you will look fabulous!

    We have been visiting the Willammette Valley every fall for the last few years (our daughter lives in Portland) and love staying at the Allison Inn in Newburg. A beautiful hotel with gorgeous grounds and an amazing art collection. You might want to check it out. Plus, it is in the heart of the wine country and there are all those wonderful pinots! BTW – I love your posts and always look forward to reading what’s new!

    Thank for a lovely post, the garden you mentioned is exquisite and dreamy l could just loose myself in there! Have a wonderful road trip!! We loved Oregon and checked out colleges with our daughter years ago, it is a gorgeous state.

    You are going to love visiting Oregon and the Pinot areas… We did a road trip to visit Katie and kids who live in Lake Oswego and stayed at RedHills loft and of course loved their market below., And a trip to the air museum a must!
    With so much rain and wind and ice last week Katie lost power for over 6 days and tons of trees and power lines down and roads undrivable!
    Hope the weather turns for you but be sure to bring rain boots and umbrellas! The landscape is so green and gorgeous. Can’t wait to hear about your adventures.
