Today I am joining my pals Mary Ann and Annie and some of our blogging friends. We are sharing some of our favorite dinner salads. I admit I have not been cooking much since we have been in moving mode. Two weeks ago I featured Red’s Spicy Poke Salad from Half Baked Harvest on my Sunday favorites. Last weekend I made it and took it to our son and daughter-in-law’s for dinner. They have been feeding us often. Today I am sharing a Delicious Healthy Dinner Salad You Will Love. I know we sure did.
Of course, my daughter-in-law had the table set beautifully when we arrived.
Colin and Lauren have beautiful dinnerware and flatware (we all (including my daughter) share the same flatware that we love). The cool lead bowl was found in Paso Robles. Their plates are from Arte Italia, and the chargers, napkins, and glasses are from Pottery Barn. All available items are linked below the picture.

When Steve and I were in Hawaii we ate fish every meal (even breakfast a couple of times), many which included poke. We have a great seafood market and restaurant that we love in Templeton and we plan on eating a lot more fish. We love Poke. You can find the recipe for Red’s Favorite Spicy Tuna Bowls here on Half Baked Harvest. According to their directions, the recipe takes about 30 minutes. It is simple but it took me more like 45 minutes to an hour start to finish.
You could definitely make the spicy mayo dressing the day before. I added edamame and radishes to the cucumber mixture. I would not be afraid to make the edamame/cucumber salad a few hours before, and the radishes could be cut and sliced ahead of time as well.
To assemble the salad I used the sushi rice as a base and then added baby kale (not called for in the recipe). I then layered the cucumber edamame mixture. I topped that with the pickled cucumbers and radishes and then drizzled the spicy mayo mixture over it right before serving. This salad is going to be on regular rotation at our house. Everyone loved it. If you love salads as much as I do, you can find all of my salad recipes here.
My David Austin roses are at their peak right now, so I picked a group and took them to Colin and Lauren’s.

I hope you enjoyed A Delicious Healthy Dinner Salad You Will Love. My time is very limited right now so I apologize for the short post. Fortunately, I am joining others who I know will make up for me and knock it out of the park. Click on the links below for some more yummy salads to add to your repertoire.
Cindy,
The salad the table and flowers are so pretty. Your daughter-in-law is very talented. Thank you for sharing. Is the name of your two David Austen roses listed in one of your other posts?

Karen
That salad was soooo delicious!
You sound like a good mother in law, appreciative! What a great looking salad and table. Style really runs in the family. Great post.
Looks amazing, Cindy! A work of art on a plate. Yum. And your roses. Stunning. Your son and daughter-on-laws dining room reminds me a lot of yours in your downtown fixer. I can’t wait to see you put together your new dining room. And the entire house. This looks delicious. Jim’s a huge fish fan and I’m pinning and printing because its salad-for-dinner season. Hurrah! xo

Oh wow, Cindy! I didn’t even realize this was on rice! This looks like the best main dish salad! And I love that you can make parts of it ahead of time and just assemble it when you are ready to serve. Your David Austen roses are absolutely gorgeous and look perfect in Colin and Lauren’s beautiful dining room!
Cindy! I’m OBSESSED with poke bowls and this one looks so good and so easy! Will be making ASAP! Thank you for inviting me to this fun (and delicious!) round up!
Cindy, I hope the move/unpacking is going well. This salad looks delicious! I cannot wait to see more of the other salads and your new house!
Everything I try from Half Baked Harvest is wonderful-rich and full of layered flavor. What a lovely DIL you have! Lucky Mum
I agree Sandy. They are the Ina Garten of the blogging world! They actually test their recipes!
Yum! This is Tommy’s favorite and I’m so glad to have the recipe since we have a great fresh fish market close by.
Good luck with the move. You are amazing.
I think Tommy will approve!!
Love the silverware – but the care instructions on the website say “hand wash”.
Do you hand wash them or put them in the dishwasher?
Hi Marilyn
Oh my god no! I own them, as do my dil and daughter. We put them in the dishwasher but I don’t like them to look perfect. I have had mine for probably 15 years.
What is the name of your silverware?
Salad looks amazing and I would like to try and I am sure it is me, I cannot find the link to your salad.
Hi Viv
I just added it in another spot the very beginning as well. Here is the link https://www.halfbakedharvest.com/poke-bowls/
Thank you. It was my mistake, i realized that you added to Teaghans poke bowl, I thought it was a totally different recipe of yours.
Good luck with all the unpacking
I love your glasses–can you share the brand?
Hi Laura they are linked below the picture of the table setting where it says shop Lauren’s table setting. Just click the arrow and you will find the glasses. Thank you!
Looks delicious!! Hope to see more of your son and daughter in law’s house…it looks darling! good luck with the move.
