I am always on the hunt for salads that do not require any cooking this time of year. This flank steak salad with blue cheese, figs, blackberries, and kiwi fits the bill. Today I am joining Mary Ann (Classic Casual Home), Annie (Most Lovely Things), Elizabeth,(Pinecones and Acorns) and Sue (View from Great Island) and we are sharing some of our favorite summer salads.
First Marinate the flank steak
FLANK STEAK MARINADE
One tablespoon of chopped garlic
Two tablespoons of soy sauce
Two tablespoons Worcestershire sauce
1/3 cup extra-virgin olive oil
Salt and Freshly Ground Pepper
2 pounds flank steak
Rinse the flank steak and place it in a ziplock bag. Mix the ingredients and add them to the ziplock bag with the flank steak. Let stand a couple of hours to overnight. Place the steak on a hot grill. Cooking time will depend on the thickness of the steak and how you like it. 3 to 4 minutes per side. Next, make the balsamic vinaigrette. I have been making this vinaigrette for years. It is super simple and delicious. It can be made the day before.

This is gorgeous. I would give my husband my portion of the steak, but that’s the beauty of a composed salad–all the ingredients are separate and you can focus on what you want.
Here, we won’t have blackberries for another couple of weeks. They grow wild all over, as do figs (though we planted a fig tree a few years ago and it looks like we will finally get some fruit soon chez nous). One of my favorite summer pastimes is to go foraging for fruit. Even a morning jog is more eating breakfast picked fresh from the side of a road that sees one car a day than about running.
