Taco Salad

I hadn’t had taco salad in years until my daughter made it during a visit a while back — and it instantly brought back so many memories. It was a staple in our home when the kids were growing up. The other night, I decided to make a lighter, healthier version for dinner and invited our dear neighbors to share it with us — and I found myself wondering why I hadn’t made it in years.

Healthy Taco Salad

Ingredients

Turkey Taco Meat

  • ▢1/2 Tablespoon olive oil
  • ▢1 lb ground turkey
  • ▢2 Tablespoons taco seasoning I made my own

Salad Ingredients

  • 1 bag romaine lettuce washed, rinsed, dried and chopped
  • 1 cup grape or cherry tomatoes chopped
  • 1 c cup sweet corn cut off the cob
  • 3/4 cup shredded Mexican cheese + more to taste
  • 1/2 jalapeño pepper de-seeded and chopped (optional)
  • 1 small can black beans I add garlic & mexican seasonings to give them a little flavor
  • 1 avocado chopped into chunks
  • 1/2 sliced corn tortillas I air fried them to omit oil
  • chopped cilantro for garnish
  • 1/2 c pico de gallo
  • 1/2 red onion chopped
  • 1/2 c greek nonfat yogurt you can use sour cream

Instructions

  • Cook turkey: Add oil to a skillet over medium heat. Once hot, add turkey. Break meat into small pieces using a spatula or meat chopper as it cooks. Cook for about 6-8 minutes or until the turkey is no longer pink. Add taco seasoning to the pan and toss to combine. Set aside.
  • While the turkey it cooking start to prep your salad ingredients. To build salads, start with a base of romaine lettuce in each bowl and add the toppings turkey taco meat, tomatoes, corn, cheese, jalapeño, avocado, pico de gallo, and chips. Drizzle with Trader Joes Cilantro Dressing

Outfits of the Week

This week for fun I came up with three black and white outfits in three different price ranges. For fun before you check prices, see if you can guess which is the least and most expensive.

Black and Whtie Outfit of the Week-J Crew & BR

Many of you ask for extended Sizing so here you go. The shirt, and pants (I have the shirt on order and own the pants in black and love them) both come in extended sizes. The bag (I own as well), sandals, hat, sunnies, and earrings complete the ensemble.

Black and White Outfit of the Week VB & Milly

Love the textural mix of this lace shirt, and eyelet pants, combined with the bag (that I own and have carried all over the country in the last couple years, woven sandals and hat (packable and sturdy). Tortoise earrings, bracelet, and sunnies round out the mix.

Eyelet pants, lace top ,cane tote, highly rated simple sandals, chic earrings, straw hat and sunnies for the win!

    Sherry Hart is amazing. I have followed her for years and love all of her projects! And I love her outfits of the day many of which are thrifted, proof that you do not have to spend a lot to look stylish and amazing.

    Taco salad, I love it! I usually make mine with sweet potatoes, and then put the taco meat on top.

    Cindy you could write anything an I would read it. I love all of your posts!

  2. Cindy, love Sherry’s work…our mountain cabin, which we visited infrequently, is now where we are spending most of the summer to get out of the Phoenix heat. I feel like it needs a major do-over and seeing Sherry’s work is giving me the itch to take on this project. Love the black/white outfits~so classic. Also, really didn’t think of taco salad but now I will try and prepare it this week. Been traveling a bit so not checking in as frequently, but hope to catch up on all your posts. Have a wonderful week!

  3. I’m on board with the taco salad gang! Taco salads are one of our favorite summer rotation meals too. Thanks for the 3 outfit choices with different price ranges. Very nice.
    I’d really be interested in hearing more about non invasive treatments for faces as we age. Best treatments and options. I’m seriously considering permanent eyebrows and eyeliner as my brows get thinner and my eyeliner seems to disappear so quickly. We have a girl in a local spa that does amazing work! Also with the loss of skin elasticity, I’m unfortunately seeing larger pores. Help!

  4. I like the first outfit the most as it is simple. I don’t care for the over all holes in my clothes. I love taco salad but can no longer eat it. The galley wall is lovely and timeless. Have a lovely Father’s Day with your husband.

    All the outfits are great. I’m a big fan of the first one for its simple elegance ( although I do prefer the bag in outfit #2).

  8. The first photo outfit was the cheapest and the 2nd the most expensive? My guess.
    Now here is a post I’d like to see…How about some socks with those Birkenstock style sandals? Yes or No? Unacceptable? I have a pair of black ones with silver buckles and I love the look but I struggle with the no strap to keep them on my feet and although I take great care of my feet I don’t always have time for polish. So outside of always wearing sneakers for the summer I see many wear cute socks with the Birkenstocks. I think it’s cute and would also love some cute socks other than my white ankle socks with some top frilly material to style them in.
    My mother was a critical gal and always told me my feet weren’t perfect as I didn’t have the long toes known for wealthy individuals…yep…I grew up with that warmth and my confidence about my feet grew from there:0)…

    Also..alternatives for dry eye treatments some have found helpful as the medications treat only the symptoms but how can one deal with that without drops? Is laser an option?

    1. Adore the ‘mom’ comment Lori. During junior high, my dad tried to make me feel better about having a stunning/gorgeous/beautiful older sister. Dad pointed out, how beautiful my feet and ankles were, and pointed to my sister’s feet/ankles, with dramatic eye roll and grimace.

      Anyway, it did not go well afterward for any of us ! First compliment of my life, and sister went scorched earth.

    That taco salad is a winner! Thanks for reminding me about this healthy classic. Subbing Turkey for beef is a great tip. This will be on rotation at our house again!
