So many of you have asked me to add a category for recipes at the top of the blog. I am working on that. The recipes that I am most asked about are my salad recipes. From pasta salads and chicken salads to classic potato salads and leafy green salads, I am a huge salad fan, as I am sure you have noticed. Shrimp And Scallop Ceviche

I am a huge ceviche fan and this simple salad using Trader Joe’s frozen shrimp and scallops is simple to prepare and refreshing when it is too hot to cook. Red’s Favorite Ahi Poke Bowls

Another new favorite of mine (also quite simple) is Red’s Favorite Ahi Poke Bowls from Half Baked Harvest. I did vary the recipe very slightly by adding greens. You can read my entire post, A Delicious Healthy Dinner Salad you Will Love here, if you would like to see my substitutions.

Summer Flank Steak Salad

White Bean Edamame Salad

My daughter-in-law is an amazing cook so when I make a salad and she gives it the stamp of approval, I figure it can be on repeat. You can find the recipe for this White Bean Edamame Salad from Cher Castellano here. It has become one of my go-to side dishes, but you could easily add chicken to this to make it a main dish salad. Kale And Brussels Sprout Caesar Salad

I love brussels sprouts and kale. This recipe takes a traditional Caesar and gives it a healthy twist. You can find the recipe here in this post you might enjoy Progressive Dinner with Wine Pairings.

Tomato, Peach, And Burrata Salad

This tomato, peach, and burrata salad from Two Peas and Their Pod has been on repeat at our house for a few years. It’s definitely one to try if you like tomato salads. You can read the whole post where I featured it in Summer Salad, Outfit of the Week and More here.

Panzanella Salad

I am a huge Ina Garten fan. Ina’s Panzanella salad has been on repeat at our house for years. I like to serve it in summer with her grilled Tuscan Lemon Chicken and fresh sweet corn. Corn Salad With Tomatoes, Feta, And Mint

This corn salad from Mark Bittman for the New York Times is one of my favorites, and I have a few in my repertoire. I love the addition of mint. Again, you could certainly add chicken or shrimp and make it a main dish salad. You can find the recipe for Mark Bittman’s Corn Salad here.

Grilled Peach Salad With Country Ham And Fresh Herbs

This grilled peach salad is another one of our favorite summer salads. I used to make it often, and when I rediscovered it in an old Foster’s Market cookbook I couldn’t wait to make it again. The country ham and goat cheese go perfectly with the sweet balsamic-glazed grilled peaches. You can find the recipe here.

I never realized how salad-heavy my recipes were here on the blog. I could write another entire post on salads. I will save that for another day.     The Fank Steak Salad is AMAZING. I doubled the recipe for Sunday (after church) dinner, 4 adults and 5 grandchildren- everyone loved it! You are right, an unusual combination but, delicious, THANK YOU!

    I am always looking for a main course salad, especially during the summer. Like you, in the summer salad sounds good to me. Year ’round I enjoy salads for a midday lunch with friends. Several of these fit that bill perfectly. Thank you.
