A Heartwarming Soup and Sassy Rain Gear

We don’t get a lot of rain here on the Central Coast most years.   Thankfully, this year we have. We rarely need a raincoat or hat but this year is a different story. Rainy days mean no grilling (I know we are spoiled). I am a huge soup lover so I have been in soup making overdrive.  I thought today I would share with you A Heartwarming Soup and some sassy rain gear.

This soup has been a family favorite for years.  Our local bagel bakery makes a version of this that my kids loved when they were little.  I zhushed it up a bit to make it a little more healthy by adding roasted red peppers and tomatoes.  I made this for our friends at the lake last weekend. Enjoy!

Artichoke Bisque

Artichoke Bisque with Roasted Tomatoes and Peppers

Cuisine American

Ingredients

  • 3 lbs cherry tomatoes
  • 1/4 c plus 2 T (divided) olive oil extra virgin
  • 2 T butter
  • 2 red peppers
  • 1 1/2 yellow onion
  • 5 cloves garlic
  • 2 14 oz cans artichoke hearts chopped
  • 4 c chicken stock
  • 3/4 c freshly grated parm
  • 1/2 pt 1/2 and 1/2

Instructions

  1. Preheat oven to 400 degrees. Spread tomatoes, onions, and peppers on 2 large baking sheets in a single layer and toss with ¼ cup olive oil, salt, and pepper and 2 T chopped basil. Roast for 20 minutes. Remove from oven and set baking she,et aside.

    In a large Dutch oven over medium heat, 2 T olive oil and 2 T butter. Add  garlic saute until just soft and add artichoke hearts and saute for 5 minutes. Sprinkle in ½ T salt and some pepper. Add chicken stock, and roasted vegetables (including their juices. Raise heat to high and bring to a boil. Reduce and simmer for 30 minutes (uncovered). Use an immersion blender or Cuisinart to blend mixture until mostly smooth.  Add 1/2 and 1/2  to finish. Serve with a sprinkling of fresh basil and parm.

 I like to keep entertaining at the lake simple so I served it with this simple caesar wedge salad from simple bites.  I made the mistake of making my own caesar dressing because I am not much of a bottled dressing fan (fyi don’t). I would pick up Maries Caesar dressing in your refrigerator case.  This salad is better and simpler as stated in the recipe.

There you have a nice heartwarming soup for a rainy day.  Since we have been having so much rain I have been on the lookout for a pretty new raincoat.  Do you ever shop at Athleta?  I find their clothes to be really well made for the price point.

I love this rain jacket.  It isn’t on sale (they don’t have too many sales) but it is priced fairly.  Who doesn’t need another leopard scarf, right?  These stellar crop pants from Athleta (fyi they aren’t really cropped on me) are fabulous.  If you don’t think you can wear leggings you can wear these.  They are thick and forgiving.  The zippers provide even more spanx like protection.  I own three pairs of these.  These pretty cashmere gloves are on sale at Nordstrom.  The hat is packable and super reasonable.  The blondo boots (the whole line is waterproof) are waterproof and stylish.     This soup looks delicious. We’ve gotten a lot of rain and wonderful winter temps here in Southern California. I’ve enjoyed it but probably need to up my rain gear if we can expect similar rain and cold next year.

    Could you please clarify which of the tights you buy? It seems they have a number of different ⅞ tights, and the black are hard to see any defining details. Thanks

      Hi Linda
      Any of the stellars are good. I have the stellar crop pant and for me (I am 5’4) they hit just above the ankle. The stellar tights hit me at the ankle. I am very long waisted but have short legs so you might want to consider that. I have not tried the stellar trouser so I cannot speak to that one. I am wearing the stellar tights as we speak!

    I, too, am curious about how much half and half to add; I don’t see it in the ingredients. Also, is the time on the roasting correct? Forty-five minutes seems like way too long. Most vegetables like this roast for only about 20 minutes. Seems like they would be much after 45 minutes.
