Think Green for the New Year-A Great Green Tunic and Healthy Roasted Asparagus Soup

This time of year I love to make soup.  I love it even more if it can be a healthy one.  I recently made this one loosely based on this asparagus soup from Epicurious.  Steve and I both loved it and I can’t wait to make it again. If you are trying to be really lean you could even forgo the half and half.  The soup is thick enough on it’s own.

CREAMY ROASTED ASPARAGUS SOUP

This Creamy Roasted Asparagus Soup recipe is delicious! Enjoy the health benefits of one of your favorite flavorful green veggies – roasted in a soup!

INGREDIENTS:

  • 2 lbs asparagus
  • 1 large yellow onion, peeled and halved
  • 4 cloves garlic, not peeled and left whole
  • 2 Tbsp. olive oil
  • 5 cups chicken broth
  • 1 tsp fresh or 1/2 tsp. dried thyme
  • 1 tsp fresh or 1/2 tsp dried sage
  • 1/2 cup half and half
  • pinch red pepper flakes
  • zest and juice of one lemon
  • salt and freshly ground black pepper
  • pine nuts and goat cheese for garnish

DIRECTIONS:

Preheat the oven to 375 F degrees. Line a  baking sheet with parchment paper or aluminum foil.

Arrange the asparagus, onion halves and garlic cloves on the baking sheet, and toss with olive oil. Sprinkle with some salt and pepper, and then bake for about 45 minutes.

Puree vegetables in Cuisinart/food processor.  Add red pepper, sage and thyme.

Once the soup is pureed, return the saucepan to the stove and bring soup to a boil over medium-high heat. Then lower heat to medium, and stir in half and half. Season with additional salt and pepper, and a dash of lemon juice if you’d like. Optional garnish with pine nuts and goat cheese.

    Cindy, I love anything green: in color, in clothes, in food, so I will try your soup recipe. And, I love it that you are becoming a Fashionista. You go girl! When we stayed in your lake house we paid a visit to Pasolivo and I bought the Lemon Olive Oil along with a few other flavors. So fun and yummy.
